pudding for breakfast

Ah, chia, the little seeds that pack in so much.

I finally made chia pudding after seeing various recipes online and demonstrations on morning shows. It was as easy as pie, but even easier.

It tastes like the milk in your cereal bowl after you’ve eaten all the cereal. The good stuff you happily drink up for your cereal finale. The texture is much like tapioca pudding. I added sliced dried apricots and curry flavored nuts.

To make, combine 2 cups of almond milk, a little over 1/2 cup chia seeds, a dash of vanilla extract and 1/2 teaspoon of honey. Stir, sit in fridge overnight, scoop and stir into bowls, top with fruit and nuts and enjoy.

When I was little I never would have eaten this gray textured stuff someone tried to pass off as pudding, but oh how good it tastes when you know how good it is for you!
