I could eat pancakes every single day. The same ones, either blueberry with lemon curd on top or german chocolate pancakes. Last Sunday I tried a very rough interpretation of masala chai pancakes with cranberry compote on top to change things up a bit, plus a bag of cranberries needed to be eaten up. I was in charge of the cranberries and pancake mix, Case has the patience and just the right touch to cook perfectly cooked pancakes, so he did that.
The cranberries were cooked on the stovetop and mixed with water and a touch of maple syrup, brought to a boil, turned down to medium and stirred and stirred until it looked like jam, much quicker than making lemon curd.
So after looking online I used what I had on hand, the same buckwheat flour pancake recipe that the other pancakes mentioned previously are made from and added a bit of ground espresso, cinnamon, freshly ground nutmeg, cardamom (the secret to that chai taste) and ground cloves.
The result was quite tasty and a refreshing change. A couple episodes of Breaking Bad (just made it to season 2) and pancakes…it was a very nice morning.
